Good Good Apricot Jam Scones Recipe

This recipe uses Good Good No Sugar Added Jam as both a flavor enhancer and a natural sweetener, resulting in soft, fruity scones with a delicate apricot glaze topping.

Ingredients

For the Scones:

  • 2 cups (250 g) all-purpose flour

  • 1 tbsp baking powder

  • 1/4 tsp salt

  • 1/4 cup (60 g) unsalted butter, cold and diced or shredded

  • 1/3 cup (80 g) Good Good Apricot Jam

  • 1/3 cup (80 ml) milk, plus extra for brushing

  • 1 large egg

  • 1/2 tsp vanilla extract

  • Optional: 1–2 tbsp sugar (if you prefer sweeter scones)

  • Additional jam for serving

For the Apricot Glaze:

  • 1/2 cup (60 g) powdered sugar

  • 1 tbsp Good Good Apricot Jam

  • 1–2 tsp milk or water (adjust for consistency)

  • Optional: 1/4 tsp vanilla or almond extract

Instructions

1. Preheat Oven

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

2. Mix Dry Ingredients

In a large bowl, whisk together the flour, baking powder, and salt.

3. Cut in Butter

Shred cold butter using a cheese grater. Add the shredded butter to the dry ingredients. Use a pastry cutter or your fingertips to rub the butter into the flour until the mixture resembles coarse crumbs.

4. Mix Wet Ingredients

In a small bowl, whisk together the jam, milk, egg, and vanilla extract. If using sugar, stir it into this mixture.

5. Combine Wet and Dry Ingredients

Pour the wet mixture into the dry ingredients. Gently stir until the dough just comes together—don’t overmix.

6. Shape the Dough

Turn the dough onto a lightly floured surface and pat it into a circle or rectangle, about 1 inch thick. Cut into 8 wedges or use a biscuit cutter to make rounds.

7. Prepare for Baking

Place the scones on the prepared baking sheet. Brush the tops lightly with milk for a golden finish.

8. Bake

Bake for 12–15 minutes, or until the scones are lightly golden and cooked through.

9. Make the Apricot Glaze

While the scones bake, prepare the glaze. In a small bowl, whisk together powdered sugar, apricot jam, and milk (start with 1 tsp and add more if needed) until smooth and drizzle-ready.

10. Glaze and Serve

Once the scones have cooled slightly, drizzle the apricot glaze over the tops. Serve warm or at room temperature with extra jam and butter, if desired.
